Stove Top: Two Skillets Cooking Method
To reduce the total cooking time for our dishes, we use two skillets simultaneously, one for vegetables and the other for meat or seafood.
We use a two-step process of cooking:
Steam-Fry Vegetables: Heat 1 teaspoon oil in a skillet over medium-high heat, add vegetables and spread evenly. Drizzle 2 tablespoons water over vegetables, cover the skillet and let cook for 4 minutes (do not lift the cover, do not stir). This method of cooking lightly caramelizes the vegetables enhancing their sweetness and also provides a slight crunch, making the vegetables taste good.
Stir Fry Meat or Seafood: While the vegetables are cooking, heat 1 teaspoon oil in the other skillet over medium-high heat, add meat or seafood; stir fry for 4 minutes.Transfer vegetables to the skillet with meat or seafood, add Master Sauce; stir fry for 2 minutes, or until meat or seafood is done.
All of this in about 8 minutes. Hooray!
